Caracara oranges are slightly smaller than regular navel oranges, thinner skin, orange-red flesh, and more fragrant and richer than navel oranges.
What is Caracara Navel Orange?
Usually available from December to May, Caracara orange is famous with its juicy berry-red flesh and palatable sweetness with a refreshing orange aroma. It tastes similar to other oranges, but the advantage is that the juice is very rich. Since the flesh contains lycopene, you can see a beautiful pink hue flesh inside when you cut Caracara orange in half.
Caracara orange is a good source of antioxidants, vitamin A, and vitamin C.

Caracara Orange Recipes
Cara Cara Orange Margarita
Yield: 2 Servings

PREPARE
4 oz. Tequila
4 oz. Cara Cara orange juice
2 oz. Lime juice
1 oz. Triple sec
1/2 oz. Simple syrup, or to taste
Coarse salt and orange zest for the rims
INSTRUCTIONS:
Combine the salt and orange zest in a shallow bowl.
Run the edge of a cut lime along the rims of the cocktail glasses and dip them into the salt.
Add the tequila, orange juice, lime juice, triple sec (or Cointreau), and simple syrup to a cocktail shaker.
Fill with ice, shake well, and pour into the prepared glasses.
Serve with a wedge of orange or lime, if desired.

Caracara Orange Tart
Poppy Seed Crust:
PREPARE
¼ cup unsalted butter softened
¼ teaspoon fine sea salt
¼ cup of sugar
1 cup all-purpose flour
1 tablespoon milk or water
⅓ cup poppyseeds
METHOD
Preheat oven to 350°F
In a food processor, blend together all the ingredients until they come together in a ball. If you find it too dry, add some milk. Add some flour if too wet.
Press into the tart pan. Lay a sheet of parchment paper over the dough.
Add pie weights, dried beans, or sugar (whatever works for you) and bake the crust for 15 minutes.
While it’s baking, make the curd.
Cara Cara Curd:
PREPARE
3 large eggs
3 egg yolks (reserve whites for meringue)
1/3 cup sugar
1/2 cup caracara orange juice
Zest of 2 caracara oranges
1 stick unsalted butter, softened and cut in bits
½ teaspoon of sea salt
METHOD
In a pot, add all the ingredients. Let it cook on medium-low, whisking frequently.
Once it coats the back of a spoon, it is done. Be careful not to let it overheat and boil.
Press it through a fine-mesh sieve to remove bits.
Pour curd into the hot crust and bake for an additional 10 minutes to set the curd.
Once baked, allow the tart to cool. Place it in the fridge to fully set and chill.
Cara Cara Meringue:
PREPARE
3 egg whites
3/4 cup sugar
¼ plus ⅛ cup caracara orange juice
¼ teaspoon salt
1 teaspoon pure vanilla extract
METHOD
In a small saucepan, boil the sugar and orange juice. Clip a candy thermometer to the pot.
Meanwhile, begin whipping the egg whites in a stand mixer with a whisk attachment.
When the sugar reaches 250, remove from heat and pour into the heatproof glass (like a ball jar)
When egg whites are starting to form soft peaks, pour the sugar mixture in with the mixer on.
While the mixer is running, add salt and vanilla.
Continue whipping until you have stiff peaks – when you lift the whisk, the meringue should hold its shape.
Add the meringue in dollops over the tart and smooth it over in the shape of your liking.
Place the meringue tart in the fridge to set. Serve cold.
