  4. Watering: Water your mounds generously during the first week, then gradually decrease the frequency to once a week. Sweet potatoes need consistent moisture, especially during the first six weeks after planting.

Yields: 4 Servings


Storing: Store mashed potatoes in the fridge or freezer. For freezing, use a sealable bag and remove all air before sealing. They'll stay good for up to six months, making for a convenient and quick side dish.

Serve With: Bread or anything you’d normally serve mashed potatoes with.



PREPARE

  • 1.5-2 pounds purple sweet potatoes (Stokes or Japanese)

  • 2 ounces ghee/butter/plant-based butter alternative

  • 2 cloves garlic, minced

  • 1/4 cup minced fresh herbs (sage, thyme, chives, etc.)

  • 1/2 cup milk or milk alternative (unsweetened and plain if plant-based)

  • salt and pepper to taste


INSTRUCTIONS

  1. Wash and peel the sweet potatoes and cut them into large chunks. ( It's not necessary to peel the potatoes just wash them well if you like the skins in your mashed potatoes.)

  2. Place the sweet potato chunks in a large pot and cover them with cold water.

  3. Bring the pot to a boil on the stovetop, then cover and cook until the potatoes are fork-tender, usually about 15-20 minutes.

  4. While the potatoes are boiling, combine the butter or ghee in a small sauce pot over medium-low heat.

  5. Add the garlic and herbs, letting them simmer for a few minutes until the butter is completely melted and infused with the herb flavors. Set this mixture aside.

  6. Drain the potatoes once they are ready and place them back into the pot.

  7. Add the milk, salt, and pepper to the potatoes and mash until creamy.

  8. Pour the melted butter herb sauce (reserving some for serving) onto the mashed potatoes and stir to combine.

  9. Serve the mashed sweet potatoes with the additional butter herb sauce and finish with a sprinkle of flaky sea salt.

Roasted Purple Sweet Potatoes

PREPARE

  • 2 large Stokes purple sweet potatoes

  • 2 tablespoons ghee (or butter), melted

  • 1 sprig fresh rosemary, minced

  • 2 cloves garlic, minced

  • Sea salt and freshly ground black pepper to taste

INSTRUCTIONS

  1. Preheat the oven to high broil.

  2. Bring a large pot of salted water to a boil.

  3. Trim the ends of the sweet potatoes and cut them into 3/4" - 1" thick slices.

  4. Gently lower the potato slices into the boiling water and cook, covered, for 15-20 minutes until they're tender but not mushy. Remove them to a paper towel and drain.

  5. Stir the melted ghee, rosemary, and garlic together in a small bowl.

  6. Place the potato slices onto a large baking sheet. Gently press down on each slice using the back of a fork until slightly smashed.

  7. Spoon the ghee and herb mixture over each smashed potato slice.

  8. Transfer the baking sheet to the oven.

  9. Broil for 10-12 minutes until the edges and tops of the potatoes are crispy.

  10. Season each smashed potato with salt and pepper.

  11. Serve hot. Enjoy your delicious smashed purple sweet potatoes!
